what to do about the greens

So we accidentally got turnip greens instead of lettuce at the grocery store.

We've never eaten them before.

Any good ideas on what to do with them?

Eat them in a salad like lettuce. We like our salads with lemon juice, celery, tomato, cucumbers and carrots.

Or you can wilt them and serve them with butter. Bring about 1 cup of water to boil in a pan. Drop in the green, cover, remove from heat, and wait about 5 minutes. Then serve with salt. pepper, and melted butter. Lemon pepper or lemon juice would be a good addition.

Why lemon juice? Greens are alkaline so the acid in the juice brings balance to the flavor. Good stuff! They are a treasure, to be sure. Freeze what you don't eat and you can sneak it into spagetti sauce, cheesy pizza or broccoli soup.
